Tonalá Tres Carnes Nachos

​This dinner is a slow-cooked nacho dish. This unique recipe contains three meats: pulled pork, smoked chicken, and beef. Pulled pork, if smoked well, can cook on a smoker for as long as 18 hours. Smoked chicken for around 3-4 hours. Beef takes only 2 hours to be cooked well in our dish. 
Combined, this dish develops deep flavours, given the cooking time – 24 hours! We smoke our own pulled pork and chicken; however, you can buy this from your local supermarket. Tonalá is a city in Mexico. Its name is derived from the Aztec phrase Tonallán, which means “where the sun rises.” The sun always seems to shine, every time I make this dish.

Ingredients
  • 2 tbsp canola oil
  • 2 tbsp peanut oil
  • 1tsp fennel seeds
  • 2 medium onions, diced
  • ½ tsp lemon grass
  • 1 tsp crushed ginger
  • 2 cloves fresh garlic
  • 500g beef mince
  • 1 -2 (60g) sachet taco mince (your preference)
  • 400g smoked chicken, pieces
  • 400g pulled pork
  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained and rinsed
  • 3 cans chopped tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef stock
  • ½ tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp high quality sweet paprika
  • 1 cup warm water
Method
Heat canola and peanut oil over a medium heat in a large saucepan.

Add diced onions, fennel seeds, lemon grass, ginger, and garlic into the pan. Stir. Then, add beef mince and stir until brown.

Add taco mix, stir for 2 minutes. The remaining oil in the pan will heat the spices releasing their flavours into the beef.

Add smoked chicken pieces and pulled pork; stir for a further 5 minutes. You will notice the combined meat mixture become loose and dry.

Add in the black beans and the corn kernels and stir through.

Add the tomatoes and tomato paste. Stir. Then stir in beef stock and stir.

Add the ground coriander and cumin and stir.
Then, add the sweet paprika.

Add the water, the dish will look like it has got too much water, however this reduce significantly over the next 2 hours.

Reduce heat to a simmer and cook for 2 hours, stirring every 10-15 minutes.

Season with salt and serve with corn chips, guacamole, and sour cream.
