I love enjoying pancakes on the weekend and adding lots of different toppings to go onto it! This recipe consists of light and fluffy pancakes, which is perfect to make for friends family and for yourself!
2 cups self-raising flour
1 tbsp caster sugar
1 tbsp lemon zest
1 tsp vanilla extract
1 1/4 cup milk
30 g butter, melted
Extra butter for greasing
Maple or golden syrup
Stewed apples or canned apples
Method Mix the flour and sugar in a bowl. Add the lemon zest, vanilla, milk, egg, and butter and beat until creamy and smooth. (Make sure there aren't any lumps of flour.)
Grease a non-stick pan with butter and heat to medium temperature. (Note: make sure to re-apply butter after every pancake.)
Pour about 150 ml of the mixture into the centre of the pan. Whilst its cooking, move the pan so the pancake doesn't stick, this will make it easier to flip.
Cook until bubbles start to form on top and the edges start turning golden, brown. Move it around the pan to keep it from sticking. Then, move the pancake to the edge of the pan and give the pan a flick to flip the pancake. Quickly bring the pan back under the pancake so it lands back in the pan. Repeat until all the mixture is used.
Serve the pancakes with a dusting of icing sugar and your favourite toppings.
