These Melting Moments literally melt-in- your-mouth! The lemon icing adds a different and fresh flavour to the overall biscuit. These are perfect when having family or friends over or taking them to lunch!
1 tsp vanilla essence
250 g softened butter
1 tbsp golden syrup
1/2 icing sugar
1 1/2 cups plain flour
3/4 cup corn flour
55 g softened butter
2 1/2 cups icing sugar
2 tbsp golden syrup
lemon rind (whole lemon)
1 1/2 tablespoons water
Method Preheat the oven to 180˚C and line a tray with baking paper. Beat the butter, icing sugar, vanilla essence, and the golden syrup until creamy and smooth.
Stir in both flours until the mixture resembles thick bread crumbs. Roll into 1 tbsp- sized balls, and gently press the centre of the biscuits (not too deep or it will make the biscuits too thin) and place on the tray. Before baking, press each carefully with a fork so the biscuits don’t break or crack further.
Bake for 15 - 17 minutes, then, leave on a rack to cool.
Transfer to a wire rack with a cake server, as they may break. But, if they do break, don’t panic! You can always stick the pieces together with icing.
Beat together the butter, icing sugar, golden sugar, and lemon rind. Gradually stir in water until the icing is spreadable. Spoon the icing into a piping bag with a wide nozzle and pipe a thick circle on on biscuit (on the flat side), then place another biscuit on top. Repeat until all of the biscuits are used.
