Hickory Smoked Chicken

​I love smoked chicken! I have been eating this recipe since I was young. You will need a smoker for this recipe. We use the Weber Smokey Mountain smoker. Easy to use, cost effective and creates seriously good smoked food.

Ingredients​
  • Four split chickens (organic is best)
  • Peanut oil
  • Four cups of BK Smoker Dust - Click HERE for recipe
 Method

Split the chickens in half, and coat with peanut oil.

Sprinkle BK Smoker Dust generously over both sides of the split chickens.

Cover with plastic wrap and set aside in the refrigerator to an hour or so. 

Prepare your smoker. Bring the temperature up to 225ºF.

Add hickory wood, and allow the smoke to settle to a light blue hue (about 5 mins)

Place the split chickens on the top grill and close the lid. Smoke of about 90 mins. Aim for an internal chicken temperature* of 165ºF (74ºC) - 'Chicken Heaven'. (Read our blog post on Chicken Heaven!)

* A word on 'Chicken Heaven'. You must get the internal temperature of your chicken to 165ºF (74ºC) to be safe to eat. This is also where your chicken will be the juiciest and most tender. We call this 'Chicken Heaven'. Use a digital food thermometer to check the internal temp of all your chicken dishes.
