Green Curry Paste

​This is an authentic green curry paste used in several Thai curries including, kaeng khieu wan kai (Thai green chicken curry). Which is my favourite curry.

​Ingredients
  • 3 large fresh green chilies
  • 1 ½ tsp black pepper corns
  • 1 large brown onion, chopped
  • 1 tbsp chopped garlic
  • 1 cup fresh, chopped coriander plant (including root)
  • 2 tsp chopped lemon rind
  • 1 tsp salt
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp mango powder
  • 2 tsp dried shrimp paste
  • 1 tsp ground turmeric
  • 1 tbsp canola oil
Method

Remove the seeds and the steams of the fresh chillies. Chop chillies by hand and place into blender with other ingredients.

Blend until smooth.

Pour extra oil if required.

Store in sealed jar in fridge, will keep in fridge for about 2 weeks.
