Caramelised pears make a perfect dessert. Add some gingerbread and you’ve got something unique and delicious! This sweet treat makes a great afternoon snack, too!
Ingredients Carmelised Pears
65 g unsalted butter
1/4 cup brown sugar
1/2 cup golden syrup
1/2 cup water
1/3 cup brown sugar
125 g unsalted butter
1 3/4 cups plain flour
1/2 tsp bi-carb soda
1 tbsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
icing sugar (to dust)
flaked almonds (to sprinkle)
golden syrup (to drizzle)
Peel the pears, cut into quarters, then halve the pears again lengthways.
Melt the butter over a low heat in a frying pan. Add brown sugar. Stir until it makes a sauce. Add pears and cook for 8-10 turning pears continuously to fully cover them in the caramel. Drain the pears in a sieve and put onto a plate to cool.
Preheat the oven to 140˚C. Grease a 23.5cm x 26.5cm pan and line with baking paper, making sure there is excess baking paper over the sides.
Stir the golden syrup, brown sugar, water, and unsalted butter in a saucepan over a low heat until the mixture is smooth. Bring the mixture the the boil, then remove from heat and leave to cool. Combine the sifted flour, soda, and spices and stir until smooth.

Pour the mixture into the pan and place the caramelised pears on top, gently pushing them into the mixture. Put the slice into the oven for 1 hour. Then, remove pan from the oven and leave to cool on a rack.
Serve the slice with a light dusting of icing sugar, scattered almond flakes, and a drizzle of golden syrup.
