This is the BEST classic vanilla cupcake recipe I have ever tried! These cupcakes are so moist and are a great mouthful. They make great shared lunches and snacks and are perfect to make over the weekend! I love a plain cupcake. It is a blank canvas to experiment on with different toppings and icing!
2 large eggs (800g)
125 ml thickened cream
3/4 cup castor sugar
1 tsp vanilla extract
1 cup self-raising flour, sifted
Method Preheat the oven to 180˚C and line a 12 cup muffin tray with patty pans.
Beat eggs, cream, vanilla and sugar in a mixing bowl for 3 minutes, or until light and fluffy.
Fold in flour until all ingredients are combined.
Fill patty pans to 3/4 full.
Bake for 15-20 minutes.
Remove from the oven and leave to cool.
Feel free to add some icing, such as: buttercream, chocolate, fondant—the possibilities are endless!
