Banana Bread

Banana Bread is my favourite afternoon snack and this recipe is a must make! Banana bread is a great way to use up overripe bananas or frozen bananas and make them into a delicious, moist and light bread.

Ingredients
  • 2 1⁄4 cup plain flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3⁄4 cup sugar
  • 1 egg, lightly beaten
  • 3⁄4 cup canola oil
  • 1 tsp vanilla extract
  • 4 bananas (ripe or overripe), mashed
Method
Preheat the oven to 180 ̊C.

Prepare a loaf tin (11.5 x 21.5cm) with baking
paper.

Sift the flour, baking soda and baking powder in
a medium bowl.

Gradually add the sugar whilst stirring.

Beat the egg in another bowl and then add the
canola oil and vanilla extract.

Mash the bananas and stir into the wet mixture.

Combine the wet mixture into the dry mix.

Transfer the mixture into the loaf tin.

Bake in the oven for 40 - 45 minutes.

Leave to cool on a tray.
