Banana Bread is my favourite afternoon snack and this recipe is a must make! Banana bread is a great way to use up overripe bananas or frozen bananas and make them into a delicious, moist and light bread.
2 1⁄4 cup plain flour
1 tsp baking soda
1 tsp baking powder
3⁄4 cup sugar
1 egg, lightly beaten
3⁄4 cup canola oil
1 tsp vanilla extract
4 bananas (ripe or overripe), mashed
Method Preheat the oven to 180 ̊C.
Prepare a loaf tin (11.5 x 21.5cm) with baking paper.
Sift the flour, baking soda and baking powder in a medium bowl.
Gradually add the sugar whilst stirring.
Beat the egg in another bowl and then add the canola oil and vanilla extract.
