Afghan Biscuits

​Afghan Biscuits are a classic New Zealand biscuit that is coated in chocolate and topped with a walnut. Afghans are one of my all-time favourite biscuits and are perfect for sharing amongst family and friends!

Ingredients
Biscuit:
  • 220g butter, softened
  • ½ cup caster sugar
  • 1 ½ tsp vanilla essence
  • 1 ½ cups plain flour
  • ¼ cup cocoa powder
  • 1 ¾ cups cornflakes

Icing:
  • 1 ½ cups icing sugar
  • 1 tbsp cocoa powder
  • 15g butter, softened
  • 1 tbsp hot water
  • 24 halved walnuts
​Method
Biscuit:
Preheat the oven to 180˚C. Line a tray with baking
paper.

Beat the butter, sugar, and vanilla extract in a large bowl until light and fluffy.

Sift the flour and cocoa powder, stir until combined.

Mix in the cornflakes.

Roll into tablespoon-sized balls and place onto the
tray.

Press with a fork.

Bake for 15 minutes. Leave to cool on a wire rack.

Icing:
Combine the icing sugar, cocoa powder, butter and
hot water in a small bowl. If necessary, add more
water (the icing should be spreadable).

Spread the chocolate icing onto the biscuits.

Top each biscuit with half a walnut.
